This class will improve the overall nutritional and taste level of all your prepared foods. We will make an excellent chicken broth which we will later use for a delicious wine sauce for poultry or pork. We will also learn how to make a vegetarian stock that will taste just like a veal stock with no meat. With this I will show you how to make a beef gravy that will fool most peoples taste buds. We will serve the gravy on some homemade fries with cheese curds! The third stock will be a delicious fish stock made with fennel and other vegetables, herbs and spices! We will make a fine fish chowder or bisque with this stock! We will use incorporate some of Francois Chartier's flavour harmonies with these dishes also.
